This recipe is great for the usage of leftover salmon or canned salmon. You can add all of the spices you want.
° 1 can (7 ounces) salmon, drained and crumbled
° 1 scrambled egg
° 1 tablespoon olive oil
° 2 leeks, finely chopped
° 2 cups of rusk
° Lemon pepper, to taste
Preheat oven to 375°F (190°C).
In a bowl, blend collectively salmon, eggs, olive oil, shallots, and 2/three of the breadcrumbs. Season with pepper. Form eight small patties with this mixture. Sprinkle the pies with the remaining breadcrumbs and place on a baking sheet (in a single layer).
Bake for 10 minutes, flipping the patties once, till golden brown on each sides.
